A FLAVOR PUNCH FOR MANY DISHES!

Serves: Makes 1 pound

Ingredients

1 lb. unsalted butter, preferably Plugra, cut into 1 inch chunks
A large handful of ramps, cleaned and roughly chopped
salt
freshly ground black pepper

 

Instructions

Combine the butter and ramps in a food processor. Process unti ramps are chopped finely and butter is smooth. Season to taste with salt and pepper.

Using a spatula, scrape butter into a container with a lid.  Refrigerate until firm.

 

Notes

Excellent for use with steak, fish and chicken.  When ramps are out of season, you may use scallions in their place.
