2 tablespoons white balsamic vinegar
2 tablespoons lime juice
1 tablespoon honey
¼ teaspoon salt
¾ cup extra virgin olive oil
2 cups watercress
2 large grapefruit, supremed
1. Whisk white balsamic vinegar, lime juice, honey, and salt. Stream in olive oil as you whisk, to create an emulsion. Taste and add more salt if needed.
2. Divide watercress and grapefruit segments between four plates. Drizzle with dressing.
